Restaurant General Manager

A leading restaurant franchise in Harare is seeking a hands-on, experienced, and highly attentive General Manager to oversee day-to-day operations at one of its busiest branches.

Key Responsibilities:

  • Manage all aspects of daily restaurant operations, ensuring smooth and efficient service delivery across kitchen and front-of-house.
  • Lead and supervise management teams across departments, including FOH, kitchen, child minders, and security/door staff.
  • Create and manage shift rosters to ensure optimal staffing levels per shift.
  • Oversee stock management: ordering, receiving, counting, variance tracking, and cost-price monitoring.
  • Maintain tight control over purchasing, GP targets, stock losses, and overall purchase-to-turnover ratios.
  • Review and reconcile all invoices, ensuring they are accurately captured in systems (GAAP, sales analysis, purchase sheets) and aligned across platforms.
  • Conduct regular training and random knowledge tests for waitstaff to maintain service standards.
  • Hold weekly meetings with FOH managers to review targets, address operational issues, and implement preventative solutions.
  • Work closely with HR on staff matters and labour-related issues.
  • Provide detailed weekly reports covering operational KPIs, including sales, purchases, staffing, and stock performance.

Requirements:

  • Proven experience in restaurant operations, ideally in a high-volume environment.
  • Exceptional stock control skills with a sharp eye for variances, waste, and margins.
  • Strong working knowledge of MS Excel (spreadsheets, formulas, reporting).
  • Confident, calm under pressure, and capable of handling unruly or unwanted guests professionally.
  • A leader who can hold teams accountable while fostering a respectful, high-performance work culture.
